Fabulous Fettucine
INGREDIENTS:
1 tsp Olive oil
1/4 cup Onion, finely chopped
1 Garlic clove
5 Mushrooms, sliced
1 cup Fresh spinach, chopped
1 Tbsp Fresh basil, chopped
8 oz. Fat free cream cheese
3/8 cup White wine
3/8 cup Skim milk
1 tsp Chicken bouillon crystals
4 cup Fettucine, cooked
1 T Fresh parsley
1 oz. Parmesan cheese, shredded
Cracked pepper to taste
DIRECTIONS:
1. Add olive oil to sauté pan and heat. Saute onion, garlic, mushrooms, spinach and basil until barely cooked through.
2. Mix cream cheese until partially liquefied. Add white wine, skim milk, bouillon crystals and pepper. Stir until bouillon crystals are dissolved. Add to sauté pan and stir.
3. Add cooked pasta and fresh parsley. Toss until pasta is coated with sauce and heated through.
4. Serve with fresh Parmesan cheese on top.
