Apple Cake

INGREDIENTS:
2/3 cup    Oil (or 1/3 cup oil plus 1/3 cup of applesauce for a lower fat version)
1 ½ cups Sugar
½ cup Egg substitute
1 tsp Vanilla
1 tsp Baking soda
1 ½ tsp    Cinnamon
3 cups    Flour
5 cups     Apples
Cooking spray

DIRECTIONS:
1. Combine the oil (or oil and applesauce), sugar, egg substitute, and vanilla. Blend well.
2. Add baking soda, cinnamon and flour (mixture will be stiff).
3. Peel and chop apples to equal 5 cups. A firm, tart apple makes a better cake. Add the apples in with the other mixture and mix on low until the apples wet the dough to give it a more of a cake-like consistency.
4. Spray a 9X13 inch pan. Pour in dough and top with 2 to 3 Tbsp of sugar mixed with 2 tsp of cinnamon. Bake at 350 degrees for 40 to 50 minutes or until toothpick inserted comes out clean.
