Sugar-Free Sweet Potato Pie

INGREDIENTS:
Serving size: 1 cup
Each serving provides:
Calories: 43
Total fat: 1 g
Saturated fat: less than 1 g
Cholesterol: 0 mg
Sodium: 88 mg
Total fiber: 3 g
Protein: 2 g
Carbohydrates: 7 g
Potassium: 331 mg

DIRECTIONS:
Preheat oven to 350 degrees.

In large bowl of an electric mixer, combine the sweet potatoes, eggs, Equal, margarine, cinnamon, nutmeg, mace, salt and vanilla.

Beat on medium speed until smooth, scraping sides of bowl several times. Slowly add milk. Beat until well mixed.

Pour into unbaked pie shells and bake 50 to 60 minutes or until knife inserted in center comes out clean.

Allow to cool before serving.
