Veggie cooking tips: Corn and barley salad

Want a new way to enjoy fresh vegetables? Make your own corn and barley salad. In a bowl, add 1 sliced cucumber, 2 cups cooked barley, 2 cups corn and 3/4 cup chopped red bell peppers. Stir in the following dressing: 3 tablespoons white vinegar, 1 tablespoon water, 1 1/2 teaspoon oil, 1/2 teaspoon dried basil, 1/4 teaspoon salt and 1/8 teaspoon pepper. Marinate for at least 2 hours before serving.
