Acorn squash is a good source of fiber, potassium, and vitamins A and C. Try it with apples and brown sugar. In a small bowl, toss 1 apple (peeled, cored and sliced) with 2 tablespoons brown sugar. Pierce 1 small acorn squash (about 6 inches in diameter) several times with a knife. Microwave on high until tender, about 5 minutes. Place squash on a cutting board and cut in half. Scrape out seeds and discard. Fill squash with apple mixture. Return to microwave and cook until apples are soft, about 2 minutes. Top each half with 1 teaspoon margarine.
